The Fresh Egg is a recovery item found in EarthBound and Mother 3. If kept long enough, it grows into a chick; if kept longer, it can grow into a chicken, which can be sold for a profit.
In Earthbound
In Earthbound, you can get a large amount of Fresh Eggs for free from the food stand in Happy Happy Village, though the stand will close down after you defeat Carpainter. However, they will probably hatch into chicks before the player even has a chance to use them. Soon enough, it will grow into a chicken.
In Mother 3
In Mother 3, you can buy unlimited Fresh Eggs from Tazmily's bakery at any time. Much like in Earthbound, the chicks will hatch after a period of time, but the chicks have no significant use until they grow into chickens, which can be sold for a good amount of DP. Another feature in the game is that if you sit in a Hot Spring with a Fresh Egg, it will turn into a Hot Spring Egg, which can restore around 100 HP. You can also get one from a Chicken in Murasaki Forest.
